I try to keep my base recipes as simple as possible. This way, you can always add or pair your meal with sides and other goodies! Chili is an easy go to. Its quick and delicious. Here is my simple Low Sodium Meatloaf recipe!

Ingredients: For Low Sodium Meatloaf

  • 2 pounds of ground meat of your choice. I use ground beef. (225 mg per 4 oz serving)
  • Single Large Egg (62 mg)
  • 2 cups of plain panko bread crumbs (55mg per 1/2 cup)
  • Top with Hunts no salt added ketchup (0mg)
  • Spices – garlic and onion powder, paprika, pepper. Season with your heart!

Recipe:

In a large bowl, combine all ingredients.  Mix well. I use my hands at its easier to make sure the egg and bread crumbs are well incorporated. Spray a large cake pan. If you have a pan with a top and bottom with slots I would use that as it lets the grease drain through and keeps your meatloaf from getting a soggy bottom! Next shape your loaf in the pan. Any shape will do! Top with ketchup. Bake in your oven at 350 degrees for 40 minutes or until done.  Top with more ketchup! Keep in mind you can also add in other veggies at 0 mg of sodium. Things like tomatoes, peppers, and green onions are normally a hit! Enjoy! Hit me up if you have great recipes to share!
