I try to keep my base recipes as simple as possible. This way, you can always add or pair your meal with sides and other goodies!
Pasta is an easy go to. Its quick and delicious.
Here is my simple Low Sodium Breakfast Casserole
Ingredients: Low Sodium Breakfast Casserole
- 1/2 bag of Simple Truth® Shredded Hash Brown Potatoes
(30mg per serving) - 4 eggs (62 mg each)
- 1 cup of homemade breakfast sausage (CLICK HERE FOR RECIPE) (85mg per 4 oz)
- Black pepper to taste (0mg)
- 1/2 cup shredded Swiss Cheese (75mg)
- 1/4 cup shredded colby jack cheese (180mg)

This recipe is so easy. Especially if you make your sausage ahead of time like I do. You can make this casserole and divide it up and freeze it individually for easy weekday breakfast meals as well.
To start, cook your sausage. Drain it.
While Sausage is cooking, Add your eggs to a large bowl and mix. You can add your pepper and swiss cheese in here.
Next add in your half bag of hash browns. You can also use potatoes that your grate yourself. For me, its easier to use the premade hash browns.
Once your sausage is done, add it into your bowl.
Give everything a mix. Make sure that all of your potatoes and sausage are coated in the egg mixture.
Next pour your mixture into your casserole pan. Use your spatula to pat it down fairly flat.
Place it in the oven at 350 degrees for 30 minutes and check it. You want to make sure your eggs are cooked thoroughly. Once they are, add your colby jack cheese. Leave it in the oven just long enough to melt the cheese.
Pull it out and let it cool!
Keep in mind there is more sodium than I usually have in this recipe. However, it feeds 4-6 people. So your total will be around 200 mg per serving if you split it into 4. Less if you split it into 6.
