I try to keep my base recipes as simple as possible. This way, you can always add or pair your meal with sides and other goodies!

Pasta is an easy go to. Its quick and delicious.

Here is my simple Low Sodium Honey Roasted Garlic Carrots

Ingredients: Low Sodium Honey Roasted Garlic Carrots

  • 1 bag of mini carrots or regular carrots you cut down to your preferred length (0mg)
  • 3 table spoons of honey (0mg)
  • 3 table spoons of minced garlic (0mg)
  • 3 table spoons extra virgin olive oil (0mg)
  • 1 teaspoon of cinnamon (0mg)
  • 2 tablespoons of brown sugar (0mg) (optional) 

    Recipe:

    I want to start by saying you can add meat to this recipe. I like pork tenderloin with these carrots. However, they are an amazing side dish all on their own. Please remember if you add meat to check the sodium levels.  If you do, please prepare your meat first and then drain. 

    Also, you can add in any other veggies you would like!

    In your pan (these will go in the oven, so make sure its oven safe!), add your washed and drained carrots. Next add the rest of the ingredients mentioned above. No need to go in any specific order. Also, most of the time, I don’t even measure anymore. Just eyeball it.  

    Mix everything around well until all the carrots are coated. 

    Cover will aluminum foil. 

    I like to put my carrots in the oven at 350 degrees for about 30 minutes, then uncover and crank the heat up to 420 degrees for the last 15 minutes to get a good stick caramelization on them! 

    Stir about half way through the cooking process to make sure you get an even cook on all the carrots. 

    Once finished, pop them out of the over and let them cool. 

    You can pair these with so many great meals. I hope you like them as much as we do.
