I try to keep my base recipes as simple as possible. This way, you can always add or pair your meal with sides and other goodies!

Low Sodium Tortilla Soup is an easy go to. Its quick and delicious.

Here is my simple Low Sodium Tortilla Soup!

Ingredients:

  • 2 lbs Boneless skinless chicken breasts or thighs (390 mg per 4 oz serving)
  • 3 tablespoons of olive oil
  • 2 cloves garlic (0mg)
  • 1 large onion diced (0mg)
  • 1 package of Mrs Wages No salt added Taco seasoning
  • Cup of brown or white rice (0mg)
  • 1 package of Mrs. Cubbison’s Tri-Color Tortilla Strips (2 tbsp 15 mg)
  • 3 tablespoons of flour (0mg)
  • 1 can no salt added tomato paste or sauce (0mg)
  • 1 pint of reduced sodium chicken broth (510 mg per cup)

Recipe

In a large pot, add your olive oil, garlic, and diced onion. Cook until tender. Add remaining oil and chicken. Just brown chicken for flavor. When chicken is white all the way around, add in flour and stir into a paste. Next add in your chicken broth. Stir until the flour has dissolved into the broth. Add one can of tomato past or sauce. Stir. Add in your Mrs Wages seasoning, stir.

Simmer on low/medium heat until chicken is falling apart. You may have to add in water here and there. Use your own judgement here. Once chicken is done, remove and shred it. Add it back in. Next add in your rice. Stir and watch closely. Rice will overcook quickly. Once the Rice is done, your soup is complete!

Ladle into a bowl and top with tortilla strips!

This should come out to about 400 mg of sodium per large bowl. You can afford to add cheese, sour cream, or even some no salt added chips!

Keep in mind you can also add in other veggies at 0 mg of sodium. Things like carrots, avocados, tomatoes, peppers, and green onions are normally a hit!
